I had a wedding of a good friend last Saturday in Valparaiso, Chile (on the coast about an hour and a half away). Hilary and Edmundo are another Gringa/Chilean couple. They met in France where they were both studying abroad, lived in New York for a while, and recently moved here to Santiago. I haven’t edited the whole wedding because my mom is here visiting (yay!), but I wanted to post at least a few. I’ll add a few more photos to this post in a bit.
I just shot the civil ceremony of a couple that hired me for their December wedding. I never knew what civil ceremonies were like here. It’s an emotional and beautiful event. The one I was just at was at a beautiful house almost in the mountains. I’m going to wait for their wedding to post their photos, but I did get this great shot of their dog.

When I woke up yesterday morning, I had no plans to have a Thanksgiving dinner or celebrate it. But thankfully my other gringa friend called and suggested we make dinner together. I went out and bought Turkey and cranberry sauce and had potatoes at home for mashed potatoes. I actually found Ocean Spray Cranberry sauce. Whole turkeys are pretty hard to find here, but I wasn’t going to take the time to cook one of those anyway. Plus, I prefer white meat and the breast I bought was perfect. My friend brought the ingredients for baked mac and cheese, apple crisp, and green beans. I ended up making a white gravy too. I was surprised at how easy everything was.. I’m not much of a cook. We got to show my Chilean and her Chilean/Rapanui (is that correct, or do people from Easter Island only say they are Rapanui?) what good American food is. The mac and cheese is the best I’ve ever had in my life!
Anyways, every good blogger blogged yesterday about what they are thankful for, so, even though I’m a bad blogger and am inconsistent, I’ll list a few things I’m thankful for:

Sounds like your Thanksgiving was a success!! God I love mac & cheese. I couldn’t find turkey in Amsterdam either… so we had mashed potatoes, green beans, garlic bread, salad + a schmancy chicken dish Steven makes. It wasn’t completely traditional but a great turkey day nonetheless!
